Italian Parsley

Believe it or not, but Italian Parsley, or any parsley, is not just a garnish.  It is a sweet and flavorful herb, as well as, being packed with vitamins A and C.  Simple remove the leaves, chop and include in the following ways:   in your garden green salads, for use in chicken or egg salad, sprinkle it on your pasta salad, or over your eggs in the morning. You can combine it with cilantro and use it on fajitas or chop some into fresh salsa. When heated it quickly looses it's flavor, so add right at the end.  My personal favorite it adding it to my pesto sauce, I find basil by itself to be overpowering.  The sauce is then used on our pizzas.

Since its flavor is not overwhelming, you can even use a bit of this green sparingly in fruit salads, providing a nice contrasting flavor to sweet fruit. There are hundreds of ways to use parsley to impart a wonderful taste to your food, so simply get creative as you use it.

Fresh parsley is good for about a week.  To store it, simple treat it as you would a bouquet of flowers, cut a little off the stems and place in a cup of water, then place the cup in the fridge.
