We have got our canning system down now. It was like a fine dance, involving constant movement, stirring, pealing, cutting, blending, boiling, scooping, sealing, cleaning, and celebrating how fast we've gotten at this! In 2 1/2 hours, Suzie and I, picked apples, processed and canned 7 quarts. We are confident that if apples were pre-picked that we could can 14 quarts in the same amount of time. Is that our egos or do we finally feel like we know how to work perfectly together? I vote for working in perfect harmony.
So we didn't get to do pie filling as hoped for, as some of the mail ordered ingredients haven't arrived. I'm sure that they will show up later today. Planning on canning pie filling August 30th if you'd like to join us let me know.
